Now you need some healthy IP inspo.  I‘m your girl.  I gathered 31 days of HEALTHY Instant Pot recipes for you to try.  There are tons of recipes out there that contain questionable ingredients, but I’m here to tell you it can be done.  You can cook delicious meals in your Instant Pot and eat healthy and clean.  No condensed soup required!

Day 2- 21 Day Fix Instant Pot Asian Chicken–  I love to call this pantry chicken because I always have what I need on hand.  If I have ginger and garlic, I throw it in. If not, I don’t.  Still delicious!!!

Day 3- 21 Day Fix Instant Pot Flank Steak Tacos – Tacos do not just have to be on Tuesday- tender flank steak, warm tortillas, and cilantro lime slaw are perfect any day!

Day 4- Instant Pot Chicken Tortilla Soup (21 Day Fix) – Dump the ingredients, stir, turn on.  It’s that simple. The flavor though?  In-freaking-credible.

Day 5- Instant Pot Sausage and Broccoli Pasta (21 Day Fix) – So simple and so yummy- perfect weeknight dinner!

Day 6- 21 Day Fix Instant Pot Beef Stroganoff | The Foodie and the Fix – This version of the comfort food classic has healthy swaps and reasonable portions to keep you on track!

Day 7-  21 Day Fix Instant Pot Ramen Noodles – These ramen noodles use brown rice noodles and veggies for a healthy twist on the favorite!

Day 8- Healthy Instant Pot Shepherd’s Pie [21 Day Fix | Dairy and Gluten Free] – Sometimes I wonder how healthy can taste this good.  No one will even notice the secret ingredient in the topping!

Day 9- Egg Roll in a Bowl | Carrie Elle- a healthier, low carb version of the take out favorite!  It’s so filling and full of veggies, too!

Day 10- Instant Pot Chicken and Broccoli (21 Day Fix) – Chicken and broccoli that can rival your favorite Chinese takeout! Serve with cauliflower rice for extra veggie power!

Day 11- Instant Pot Sausage and Lentil Soup (21 Day Fix) – If you are apprehensive about lentils, this is the recipe to try!  Full of veggies, it’s a hearty and filling soup- and makes a TON! Yay for leftovers!

Day 12- Healthy Tuscan Chicken Pasta | My Crazy Good Life – Pair this copycat Tuscan Chicken with some more veggies to balance out the rich (but healthy) flavor!

Day 13- 21 Day Fix Instant Pot Beanless Beef Chili {Paleo/Whole 30 Friendly} – This chili is FULL of vegetables and not a single bean.  The flavor is out of this world!

Day 14- 21 Day Fix Instant Pot Maple BBQ Chicken (Slow Cooker Option) – try making this with Instant Pot Loaded Cauliflower Mash

Day 15- 21 Day Fix Instant Pot Beef Bolognese with Spaghetti Squash – Spaghetti squash makes the perfect vessel for this beef bolognese- and it steams right in the IP while the sauce cooks! Woohoo!

Day 16- Instant Pot Jambalaya (21 Day Fix) – I love subbing different combinations of protein depending on what I have – sausage, shrimp, and chicken with homemade cajun seasoning makes a killer Jambalaya!

Day 17- 21 Day Fix Instant Pot Chicken Marsala (Stove Top Option)  I always recommend this one to Instant Pot beginners.  It is simple enough for first timers, but fancy enough for company!

Day 18- Shredded Mexican Chicken | Carrie Elle – I don’t even have to remember to thaw the chicken for this one.  It actually calls for FROZEN chicken.  Amazing.  I serve it over 21 Day Fix Cauliflower Rice with Lime and Cilantro

Day 19- Instant Pot Beef and Broccoli (21 Day Fix) – This is the beef version of the classic Chinese takeout.  Sometimes it’s hard to believe it’s not takeout!

Day 20- Instant Pot Mac and Cheese {Gluten Free} | 21 Day Fix Instant Pot Mac and Cheese {Weight Watchers Freestyle}  pair this with 21 Day Fix Krispie Baked Chicken for a perfect kid friendly meal!

Day 21- 21 Day Fix Instant Pot Buffalo Chicken Chili – This is a great game day chili, or any time the buffalo chicken craving hits! No need to hit up the wing joint.

Day 22- Instant Pot Lemon Chicken Noodle Soup | The Foodie and the Fix – Just think Chicken Noodle Soup but with the addition of lemon and green onions.  It always heals whatever ails me!

Day 23- Instant Pot Mushroom Risotto | My Crazy Good Life – This delicious dish subs short grain brown rice to make a healthier, yet super yummy and simple risotto!

Day 24- 21 Day Fix Instant Pot Caprese Chicken (Slow Cooker Option) – Pair this with 21 Day Fix Three Cheese Zucchini Bake for a little hint of summer all year long courtesy of your Instant Pot.

Day 25- Instant Pot Burrito Bowl | My Crazy Good Life – Perfect to meal prep for lunch for the week. Serve over greens for a good balance of protein, veggies, and carbs!

Day 26- Healthy Instant Pot Baked Ziti | 21 Day Fix Instant Pot Baked Ziti [Gluten-free] – The secret is in the layering…  you are only 2 minutes of cook-time away from gooey, cheesy comfort food!

Day 27- 21 Day Fix Instant Pot Pulled Pork with Maple BBQ Sauce {Crock Pot Option} – This pulled pork is delicious plain, with sauce, on a bun. or simply with veggies.  You cannot go wrong!

Day 28- 21 Day Fix Instant Pot Balsamic Pork Tenderloin – keep the balsamic flavor going and pair it with 21 Day Fix Crispy Shaved Brussels Sprouts with Bacon, Parmesan, and Balsamic. I’m addicted!

Day 29- 21 Day Fix Zuppa Toscana (Instant Pot/Stove Top) – This copycat Zuppa Toscana comes together quickly enough to cook on a weeknight!

Day 30- Instant Pot Asian Pork Tenderloin (21 Day Fix) – I usually serve this with green beans and brown rice ramen noodles, but really any veggie would be delicious!

Day 31- 21 Day Fix Instant Pot Meatloaf and Mashed Potatoes – I love when my Instant Pot pulls triple duty and makes the meatloaf, mashed potatoes, AND carrots with only one pot to clean afterward!
